Zucchini, spinach, mushroom egg white quiche

I love summer because you can get such great fresh produce! Here is a healthy breakfast idea packed full of fresh vegetables"

Ingredients

8 egg whites
1 3/4 C skim milk
1 small zucchini, sliced
2 C bay spinach
1 can (4 oz) mushrooms
1 Tbsp olive oil
1 Tbsp garlic powder
1 Tbsp chives
1 C mozzarella, part-skim


Instructions

Heat oven to 350. Heat olive oil in a skillet. Add zucchini and saute for 3 minutes. Add spinach, mushrooms and garlic powder. Saute until spinach is wilted. Pour vegetables into a greased pie plate. Sprinkle 1/3 cup mozzarella over vegetables. Mix egg whites, milk and chives and pour over vegetables. Sprinkle with remaining cheese. Bake 20-30 minutes until a knife inserted into center comes out clean.
