The Incredible Breakfast BurritoUser Submitted Recipe
Large cooking skillet
1/4 cup olive oil
1/4 cup butter
1 cup chopped tomatoes
1 cup chopped ham
1/2 cup each of white onion and green onion chopped
1/4 cup green, red, yellow or combination of bell peppers, chopped
2 cups potatoes, cottage style, baked in oven until crisp.
6 strips of bacon, cooked
6-8 eggs, beaten
3-4 large flour tortillas
Heat olive oil and butter in large skillet until sizzling hot. Add tomatoes, ham, onion, peppers, and potatoes. Saute on medium heat and stir until vegetables are cooked. Add eggs and mix thoroughly until eggs are done and slightly dry.
Heat tortillas and divide filling equally into all the tortillas. Place two pieces of cooked bacon in each and roll tightly, tucking the ends in to enclose filling. To keep warm, wrap them immediately in foil and place in warm oven. Best eaten right away!
