"Ingredients
DRY INGREDIENTS:
2 1/2 cups(625 mL) all-purpose flour
1 1/4 cups(310 mL) packed brown sugar
1 1/2 tsps(7 mL) baking powder
1 tsp (5 mL) baking soda
1/2 tsp (2 mL) salt
1 tsp (5 mL) nutmeg
1 Tbsp (15 mL) cinnamon
WET INGREDIENTS:
2 eggs
1 cup (250 mL)
1% white milk
2 (med - large) mashed& bananas
2/3 cups(150 mL) melted salted butter
1 tsp (5 mL) vanilla
1 1/2 cups (375 mL) chocolate chips
Instructions
First, in a separate bowl, thoroughly mash the bananas with a potato masher and set aside. They will ripen in the bowl. Next, melt butter in sauce pan or in microwave and set aside. In large bowl, sift together flour, baking powder, and baking soda. Then whisk in brown sugar, cinnamon, nutmeg and salt. Whisk everything together thoroughly. If small balls of brown sugar form, use your fingers to break them up. (get your hands in there!)
In separate bowl, whisk eggs, 1% milk, melted butter and vanilla. Then whisk in mashed banana's. Pour over dry ingredients. Sprinkle in the chocolate chips and stir with a rubber scraper, just until dry ingredients are moistened. Be sure to scrape the bottom of the bowl! Using an ice cream scoop, drop batter into paper-lined muffin cups, fill cups until they are almost full. Bake in center of a 375°F (190°C) oven until tops are firm to the touch, 22 to 24 minutes. Let cool in pan, on a rack for 5 minutes, then transfer muffins to a rack and let cool.
