Coconut-Zucchini Bread

Heavenly... a true bite of happiness in each loaf. Even better with a cup of coffee and shared with a friend!"


3 eggs
1 cup olive oil
2 cups sugar
2 tsp vanilla
3 cups whole wheat flour
1 tsp salt
1 tsp soda
2 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1 1/2 cups zucchini - shredded
1/2 cup flaked coconut
Turbinado Sugar for topping (optional)


Preheat 350
Beat Eggs, Oil, Sugar & Vanilla.
Mix Dry ingredients, excluding Zucchini & coconut.
Add dry ingredients slowly to Egg mixture, stirring until just combined. Fold in Zucchini and Coconut.
Divide mixture between 2 well greased and floured loaf pans. Sprinkle lightly with Turbinado Sugar.
Bake 45-60min, until toothpick inserted in center comes out clean.
