Coconut-Zucchini Bread

Heavenly... a true bite of happiness in each loaf. Even better with a cup of coffee and shared with a friend!"


3 eggs
1c. olive oil
2c. sugar
2t vanilla
3c. whole wheat flour
1t salt
1t soda
2t baking powder
1t cinnamon
1/4 t nutmeg
1 1/2 c. zucchini - shredded
1/2 c. flaked coconut
Turbinado Sugar for topping (optional)


Preheat 350
Beat Eggs, Oil, Sugar & Vanilla.
Mix Dry ingredients, excluding Zucchini & coconut.
Add dry ingredients slowly to Egg mixture, stiring until just combined. Fold in Zucchini and Coconut.
Divid mixture between 2 well greased and floured loaf pans. Sprinkle lightly with Turbinado Sugar.
Bake 45-60min, until toothpick inserted in center comes out clean.
