Basic recipe
These are sooo simple, and you can just use what you have on hand"


Beat together –
1 egg
1/2 c. milk
1/4 c. vegetable oil

Mix in –
1/2 tsp. salt
2 tsp baking powder
2/3 c. sugar

Blend in
1 1/2 c. flour
1 cup total of whatever you want to have in the muffins (I like pecans and craisins or just whatever fruit I have handy. My kids like chocolate chips.).
If you like you can top the dough with sugar crystals or demarara sugar.


Preheat oven to 400°, grease or line with muffin papers a 6 large or 12 small muffin pan.
Then follow steps above.
