Grandma's Cinnamon Rolls

Dough: 5 1/2 to 6 C. flour
2 pkg. yeast
1/2 C. honey
1 1/5 t. salt
1 C. milk
1 C. water
1/4 C. butter
2 eggs
Cinnamon Filling:
1/3 C. Butter melted
3/4 C. sugar
1 1/2 tsp. cinnamon
1/2 C. chopped English walnuts
Glaze:
3 T. melted butter
2 C. powdered sugar
3 to 4 T. hot coffee
1/2 tsp. maple flavoring
Instructions
In a large mixer bowl combine 2 cups flour, yeast, 1/2 cup honey and salt; mix well. Combine milk, water and butter in a microwave safe bowl and microwave on high for about 2 minutes until warm and butter starts to melt (about 125 degrees). Add wet ingredients and 2 eggs to dry ingredients and blend at low speed until moistened. Continue to blend at medium speed for 3 minutes. By hand gradually stir in enough of the remaining flour to make a soft dough. Knead on floured surface until smooth and elastic (about 5 min.). Place in a greased bowl, turning to grease the top. Cover and let rise in a warm place until doubled (about 1 hr). Punch down dough. Divide into two parts. On a lightly floured surface roll or pat each half into a 9x12 rectangle.
Filling: Combine sugar, cinnamon and nuts. Brush each rectangle with melted butter and spread filling evenly over butter. Roll up. Pinch edges. Cut into 12 pieces. Place in a greased 9x13 pan. Cover and let rise for 30 minutes. Bake at 375 for 20 min. or until golden brown. This is not a recipe you want to over bake. It is better to error on under baking.
Glaze: Combine melted butter, powdered sugar, maple flavoring and enough hot coffee to make a glaze consistency. Spoon over warm rolls.
