Corn Bread
My mom just passed away one year ago. She was in my care for the last 2 years of her life as she suffered with Alzheimer's/dementia. Just a whisper of the woman she was her whole life in her last years. She'd forgotten the absolutely amazing cook, mother and wife she once was. A farmer's wife and mother of six with a LOVE of cooking, baking and all things food...she was friend and "grandma" of all who knew her. My memories are of her giving and selfless even in many difficult days of raising six children, helping run a successful dairy farm, and always having time for us; always cooking, baking and planning meals. She was the absolute embodiment of all that was safe, secure, warm and good to all of us, her children. Rarely needing a recipe book; she relied on memory, taste and sight to do most of her fabulous recipes. She lives on in our hearts every day and especially when preparing her favorite meals and dishes."

Ingredients

1 stick butter
2/3 cup sugar
1 cup milk
1 egg
1 cup flour
1/2 tsp. salt
3 tsp. baking powder
1/2 cup yellow corn meal


Instructions

Mix butter and sugar, add egg till smooth. Add corn meal; milk; and previously mixed dry ingredients alternately. Mix till combined.
Pour into greased pan~sprinkle top with sugar(optional).
Bake 30 - 40 minutes @ 350 degrees
