Crazy Yeast Rolls

This recipe is unbelievable, but it works. And it is very easy. Believe it or not, the pudding mix activates the yeast much better than plain sugar. You will love these "melt in your mouth" dinner rolls."
Ingredients
½ oz rapid rise yeast
1 & ¼ cup very warm (not hot) water
1 (3.4 oz) package cook & serve vanilla pudding mix
1/4 cup melted butter
1 teaspoon salt
4 cups bread flour
½ teaspoon olive oil
Instructions
In a large mixing bowl, dissolve yeast in warm water.
Add pudding mix, butter, salt and 2 cups of flour. Mix well using your Cuisinart Stand Mixer or knead by hand; gradually add remaining flour.
Knead for five minutes after last addition of flour. Shape into ball; smooth surface with olive oil; cover and let rise for 30 minutes in a warm place.
Punch dough down; form into rolls; place on bake sheet and let rise again for about 40 minutes.
Bake at 400° for 15 minutes or until lightly browned.
