Honey Wheat Three Seeded Braid

INGREDIENTS
2 1/2 Cups warm water
1 1/2 Tbsp instant yeast, or 1 packet of regular
1 1/2 Tbsp salt
3/4 honey, adjust to taste
3/4 Cup non-fat dry milk
1/4 cup Crisco
1/4 Cup Canola Oil
6-7 Cups bread flour
2 Cups whole-wheat flour
1/2 cup Sesame Seeds
1/2 Cup raw sunflower seeds
1/2 cup Poppy Seeds
1 egg with 1 tsp water for egg wash
Instructions
In order: Combine warm water, yeast, sugar, powdered milk, Crisco, oil, flour-except 1 cup, and salt in bowl. Mix on low to mix, then turn to medium. Add the reserved flour, a little at a time until the dough comes together. It does not need to clean the bowl as the whole wheat flour will absorb more water during the rise.
Knead for 5-7 minutes until elastic.
Place dough in oiled bowl. Turn over so dough is oiled and cover bowl with plastic wrap. Let rise until doubled.
Measure out 3 dough balls of 13 oz each. Roll each of these into ropes of about 18"-taper the ends. Brush each with the egg wash and set aside. Take the sunflower seeds and make a long row of them. Roll 1 strand of dough into these to cover. Place on a Silpat. Repeat with the other seeds. Place the poppy seed strand in the middle of the 3 on the Silpat. Start in the middle, braid to the end, turn and start in the middle and braid to the other end. Secure the 3 strands together at each end. Take the remaining dough and "clean" the work area with the dough by rolling the dough in it, gathering the remaining seeds in this dough. Make a loaf or rolls with this.
Let rise for 1 hour.
Bake at 350 until golden brown, about 30 minutes.
