Meat Filling
2 lb. bacon
1 package diced Farmland ham
1 diced onion
1 can drained corn (1 bag frozen corn, thawed)
or I like to use leftover grilled corn cut off the cobs - 3 or 4 cobs
Grated Parmesan cheese
Cubed Swiss
• Using kitchen scissors cut bacon into small chunks and fry on medium in a large skillet.
(Yes this is a lot of bacon - it will cook down.)
Cook till starting to crisp, drain well - remove from heat
Drain liquid from ham package, dice smaller if you'd like - add ham to bacon.
Add diced onion and corn to meats.
Salt and pepper generously - mix well.
Get nonstick muffin pan.
Spoon a teaspoon- or so of Parmesan into the bottom of each muffin cup. (This will make a nice little Parmesan crust on the bottom of each muffin.)
Assemble and Bake
Heat oven to 350.
Lightly spray your hands with cooking spray
Gently press and stretch a ball of dough with your hands to somewhat flatten it - about the size of your hand or roll it out with a rolling pin. Drape it over your hand. Put 3-4 small chunks of swiss in the middle. Move your hand over the meat skillet. Spoon a large spoonful of mixture on top of the Swiss. Pull the side to meat in the middle covering the meat, corn and cheese. Pull the other two sides over too. (This is quite easy, as the dough a soft and stretchy.) Press the dough together to seal. Put that sealed side in the bottom of the muffin tin - (Swiss side on top.) Repeat. Bake 20-25 minutes. Brush tops with a beaten egg before baking. I lay a towel out to tip the pan over and remove cooked buns, so I may cook the second batch right away.
Makes 24 Yummy meat and cheese filled buns. Great hot or cold.
