1 cup water
1 cup Sugar
2 cups packed fresh mint leaves
4 Kiwis peeled and quartered
1 liter sparkling water or club soda
In a small small pot, bring water to a boil, add sugar and stir until sugar dissloved. Let cool slightly and refrigerate until completely cooled.
In a blender, puree mint leaves with 1/4 cup cooled syrup,add 6 kiwis and blend until smooth. Stir in remaining syrup.
Pour mixture through a sieve into a pitcher; discard solids. Stir in ice and 1 liter sparkling water or club soda.
