Eggplant Caviar

Makes about 1-1/4 cups"


1 1/4 pounds eggplant, trimmed and peeled
1/4 cup extra virgin olive oil
3 cloves garlic, peeled
12 leaves fresh basil
1 teaspoon kosher salt
1/2 teaspoon freshly ground pepper


Preheat oven to 400°F. Line baking sheet with parchment paper

Insert the slicing disc in the Cuisinart® Food Processor. Cut eggplant to fit large feed tube. Use gentle pressure to slice.

Toss eggplant in a mixing bowl with olive oil and garlic. Place ingredients onto a baking sheet in a single layer and roast in oven until brown, about 20 minutes, flipping eggplant halfway. Once eggplant is browned, place in the work bowl of the Cuisinart Food Processor fitted with the metal chopping blade. Add the basil, salt and pepper. Pulse to chop, then process about 1 minute.

Serve warm with toasted bagel or pita chips.
