Gluten Free Falafel

Ingredients

4 cups Garbanzo beans
1 1/2 cup Tapioca flour
1 onion
1 bunch organic curly parsley
2 tsp salt
pinch cayenne
1/2 tsp ground cumin
1/2 ground coriander


Instructions

Soak garbanzo beans overnight, pressure cook for 15 min, use Cuisinart hand stick to blend garbanzo bean. Use Cuisinart food processor to chop curly parsley. Mix garbanzo beans blend with tapioca, onions and all the spices. Using cookie scooper, place on parchment paper of a baking sheet. Drizzle olive oil and flatten with a spoon. Bake 400F for 45 min. Bon Appetit!
