Spinach & Feta Flan

Ingredients

Pie Shell

2 packets Frozen chopped Spinach
4 Tbsp crumbled Feta Cheese
1 carton Cottage Cheese
1/2 cup grated Cheddar Cheese
1 cup Cream
2 Eggs (lightly beaten)
1 cup Milk
1/2 Onion, grated
2 Tbsp Flour
2 Tbsp Butter
nutmeg, salt & black pepper


Instructions

Boil spinach and drain well. Saute onion in butter, stir in flour and make into white sauce with milk and cream. Remove from stove, add beaten eggs, slowly and then return to heat and cook until thickened. Add all the cheeses and spinach and season to taste with salt, pepper and a pinch of ground nutmeg.
Spoon into pastry shell.
Bake at 450 for about 40 minutes.
Serve hot.
