Coconut Chicken
Coat the baking pan with a thin layer of butter.(Save some butter for final preparation) Then dip the chicken chunks in the flour, egg, then coconut. Place in baking dish. Drizzle remaining butter over chicken. Bake for 1/2 hour until golden brown.

1 pkg. of shredded coconut
2 eggs
1 cup of flour
1 stick of butter
Instructions
Preheat oven to 350
cut chicken into small chunks (once batter is on they will appear larger)
melt stick of butter in microwave
beat eggs in a bowl, put coconut in another bowl and flour in another.
