Spicy Corn DipUser Submitted Recipe
2 (8 oz.) blocks softened cream cheese
2 Tbsp. minced onion
1 minced garlic clove
2 cans Mexican Style Corn (mexicorn), drained
2-4 Tbsp. Sliced jalapeños, chopped
Preheat oven to 350 degrees. Beat cream cheese until smooth. Beat in onion and garlic. Stir in Mexican style corn. Stir in 2-4 Tablespoons jalapeños (depending on the level of heat you prefer:) Spray a 1-quart baking dish with cooking spray. Spread cream cheese mixture into pan. Bake at 350 for 20-30 minutes until heated through. Serve with a hefty corn chip such as Fritos Scoops.
