Shrimp a la Petruzziello

A great dish! It's one of my favorites! It travels well however once you bring it to parties you will have to keep on bringing it! It gets more requests than dessert!!"

Ingredients

9 X 12 baking dish
1 two pound bag frozen raw shrimp (large) thawed, peeled & tails removed
1 jar Marie’s Blue Cheese salad dressing YOU SHOULD ONLY USE THIS ONE (found in produce section)
2 boxes frozen Spinach thawed in microwave and drained
1 stick butter
2 sleeve Crackers (crumbled finely)
1 bag 8 oz Mozzarella Cheese shredded
1 cup grated Parmesan Cheese or Parmesan - Reggiano Cheese


Instructions

Soak shrimp in cold water to thaw.. peel and remove tails
Preheat oven 350 degrees
melt 1 stick butter in frying pan and stir in crackers to moisten them
Place Crackers mixture in bottom of 9x12 baking dish
place thawed spinach on top of crackers
Sprinkle Parm Cheese on top of Spinach
place shrimp on top of Parm Cheese
pour jar of Marie’s dressing on top of shrimp
Sprinkle Mozzarella Cheese on top

Place in oven (not covered) for about 25-35 minutes until cheese is bubbling and shrimp are pink (cooked)
You can also put under broiler after for few minutes to brown top a little. Serve immediately.
