Moroccan Carrot DipUser Submitted Recipe
2 cloves garlic
1/2" to 1" fresh ginger (enough to make 1 Tbsp grated)
4 large carrots, peeled, cut in 1 inch chunks, and boiled.
1 1/2 tsp. cumin powder
3 Tbsp. red wine vinegar
3 Tbsp. olive oil
1/2 tsp. cayenne pepper (or to taste)
1/8 tsp. cinnamon
With cuisinart running, drop in the garlic cloves and ginger slice. Process until minced. Add carrot chunks and process until 1/4 to 1/8 inch sized pieces. Add remaining ingredients, process until desired consistency for dipping. Add salt and adjust seasonings to taste.
