Chicken Salad

I find that using thigh meat rather than the usual breast makes my chicken salad moister and more flavorful. Adjust mayonnaise and relish to taste. I sometimes add a little sugar depending on the relish."


3 lbs Chicken thighs, boneless skinless
1 cup Mayonnaise
2 ribs Celery chopped
1 cup Pickle relish, sweet


Cook chicken and chop finely. Mix all ingredients together.
Serve on crackers or make small finger sandwiches.
