Olive Paste and Melba ToastUser Submitted Recipe
1 lb. Calamata olives, pitted
2 oz. anchovy fillets packed in oil, drained
2 garlic cloves
1/4 cup fresh parsley leaves, finely diced
2 Tbs. pine nuts
1 package sesame Melba toast crustini
Combine all ingredients in a Cuisinart blender or food processor and blend to a fine paste. Add very small amounts of olive oil while blending to attain desired texture for spreading. Spread olive paste on Melba toasts and serve.
