Butternut Squash Bisque

A smooth tasty bisque with a hint of tomato bisque."


1 large butternut squash about 2 cups
1/2 c half and half
1/2 cup sour cream
1/4 tsp Tabasco
2 cups chicken broth
1/4 cup v8 juice
salt and pepper to taste


Peel the squash and cut into 1" square, cook till tender about 1/2 hour. Place cooked squash in your Cuisinart blender, add remaining ingredients and blend till creamy.
Pour into a small bowl and add 1/2 tsp sour cream on top.
Yumm, It make me hungry for some just typing this recipe.
