French-Fries EggplantsUser Submitted Recipe
1 big eggplant,
3/4 cup plain bread crumbs,
6 tbsp grated pecorino cheese,
2 tsp salt,
1/4 tsp fresh ground pepper,
2 tbsp milk,
Peel the eggplant and cut in a slice about 3/4 in. cut the slices into a 3/4 in" stick.
In a bowl mix the bread crumbs, pecorino cheese, salt, and ground fresh pepper, and set aside.
Now whisk your eggs and milk together. Take your eggplant sticks and coat them into your egg and milk mixture and patting them into your bread crumb mix, repeat this step one more time to fully cover the eggplant sticks.
Fry your eggplant sticks in about 3 cups of hot oil, remove your eggplant fries out of the oil and let them rest on a paper towel to absorb the oil, serve warm.
