Orange-Pecan Chicken Salad in Endive

Great finger food for spring occasions."


2 heads endive
1 cup cooked chicken
1/4 cup finely chopped celery
1/2 to 3/4 cup mayonnaise
2 tbsp orange marmalade
Zest of 1/2 orange
2 tbsp orange juice
1/2 cup chopped toasted pecans
salt & pepper to taste


Mix chicken and all ingredients excluding the endive in mixing bowl. Season to taste. Rinse endive leaves and spoon chicken salad into them.

This is also very good with Multi-Grain crackers.
