South of the Border Hummus

“
fresh made hummus with a spicy tex-mex taste. Delicious on corn chips, pita bread, or crackers."
Ingredients
1 lb uncooked garbanzo beans (cook until soft about 1&1/2 hours)
1 large purple onion, diced
5 cloves of garlic, minced
1 bunch of fresh cilantro, chopped
fresh jalapenos (to taste)usually 2 or 3, chopped
1/2 chopped black olives
1/2 cup sun dried tomatoes
2 tblspns plain yogurt
2 tblspns olive oil
1 tblspn comino
1tblspn paprika
salt and pepper to taste
Instructions
Take soft beans, drain, & cool.
Dice sun dried tomatoes and soak until soft
In mixer bowl, place beans mix on low until pasty. While mixing add olive oil, yogurt, paprika, & comino Mix until smooth Add remaining ingredients, mix till blended.
Garnish with a sprig of cilantro, sprinkle of paprika, or bit a black olive
