Mock Zucchini Quiche'

Zucchini (5 medium)
Olive Oil (1/2 cup)
Grated Parmesan Cheese (1/2 cup)
Bisquick (1 cup)
Eggs (4)(beaten)
Onion (1 medium, finely chopped)
Parsley (1/2 cup)
Bread Crumbs (plain)to dust baking dish and sprinkle over top.
Instructions
Preheat Oven to 350 degrees.
Wash zucchini, slice into medium slices (do not skin). Finely chop one medium onion. Into a large mixing bowl add zucchini slices and onion, 1/2 cup of grated parmesan cheese, 1/2 cup of parsley, 1 cup of Bisquick and toss to mix ingredients and coat zucchini. In a measuring cup add 1/2 cup of olive oil and 4 eggs whisk together. Add to dry mixture and toss with a spatula to incorporate ingredients. Butter a 9" x 12" pyrex dish and dust with bread crumbs. Add mixture to dish gently pushing on mixtures to fill in gaps. Generously sprinkle bread crumbs over top.
Bake for 30-40 minutes on center oven rack, until golden brown. (Insert knife in center of quiche to test for moisture)
