Potato Taquitos

This recipe is quick & easy, Only 4 ingredients. It can be a main dish or hors d'oeuvre. Be creative I add what ever needs using up. "


4-5 potatoes
1/2 cup chopped onions
corn tortillas
1 cup grated pepper jack cheese
small amount of oil for frying


Boil potatoes as if you were serving mashed potatoes,(you can use leftover mashed potatoes)
Add the onions & cheese, salt to taste.
In a large skillet heat 2 tablespoons of oil.
Warm tortillas in microwave; place them between a clean kitchen towel, 4 at a time (to soften).
Place 2-3 tablespoons of potatoes in softened tortilla, roll tightly. Place in skillet on folded side (secure with a toothpick if needed); continue like this until skillet is full.
Keep turning taquitos until browned on all sides.
Start over until mix is used or tortillas are gone. Add a little oil if pan goes dry.
Serve hot top with salsa or guacamole.
