Spicy Cheese WafersUser Submitted Recipe
1 pound extra sharp Cheddar cheese, at room temperature
1 stick unsalted butter, cold
2 tsp. kosher salt
1/2 tsp. cayenne pepper
2 cups all purpose flour
1 cup broken pecan pieces
Dice cheese into cubes; slice butter into 6 pieces; add to bowl of Cuisinart food processor. Pulse to break up cheese and butter; add salt and cayenne pepper. Process until smooth, resembling a thick mousse. Add 1 cup flour and process thoroughly; repeat process with remaining cup of flour. Pour contents into bowl; knead in pecans. Shape into logs, wrap in plastic wrap, refrigerate until firm (do not freeze).
Preheat oven 325. Slice logs very thinly into wafers, placing on cookie sheet coated with cooking spray. Bake 14 to 17 minutes until firm to touch. DO NOT ALLOW TO BROWN. Remove from oven; cool on cookie sheet. Store in airtight container. Great served with drinks before dinner.
