This "meaty" appetizer could also be a very fulfilling meal. It's vegetarian, low carb, super quick, and absolutely delicious! What more could you ask for?"
Ingredients
4 portabella mushroom caps, cleaned
2tbs montreal steak seasoning
1/4c balsamic vinegar
3/4c olive oil
1 bunch baby spinach leaves
1c crumbled gorgonzola cheese
2c shredded mozzarella cheese
4 slices of prosciutto(leave this out for a vegetarian dish)
Instructions
Mix together your olive oil, balsamic vinegar, and montreal steak seasoning. Brush the mixture genorously on the inside of the cleaned mushroom caps. Lay in a handful of spinach, a slice of prosciutto, the gorgonzola cheese and then top with the mozzarella cheese. You can bake it in the oven @350 degrees for 15-20 mins, or until the cheese is melted and the mushroom is tender. You can also put these on a medium high grill for about 10 min.
