Add beans carefully (with a large lid in one hand to cover as it will pop) then mash with a large fork on med. heat as they cook, add juice from beans as needed to keep a good consistency. Remove from heat & cover. (You can substitute canned pinto or refried beans but the flavor will not be as authentic.)

Spray a large foil lined cookie sheet with nonstick cooking spray and arrange tortilla chips. Top with a layer of refried beans with a tablespoon. Then sprinkle with ground beef mixture. Add sliced pickled peppers if desired. Top with cheese and bake for 15 min. Remove from oven & serve immediately with toppings.
For the guacamole, cut avocado in half & remove seed. Scoop avocado out into a bowl with a spoon & mash with a fork. Add remaining ingredients & stir.
