One Large Red Onion, sliced and diced
4-5 cloves garlic, minced
12 Roma tomatoes, or any small, firm tomato, diced
1/2 cup (or more!) cilantro, INCLUDING STEMS -this will give great texture to the dish
1/2 cup salsa verde
Salt, to taste
Mix all ingredients.
Keep chilled until ready to serve.
Best to prepare this one up to four hours ahead of time to really let the flavors come up!
