Jamaican Jerk

It’s easy to let your mind wander off to sandy beaches, palm trees and relaxing music. All of these summer pleasures remind us of Jamaica. The dancing, the reggae, the patois and the people are the only exciting cultural aspects of the island. Our personal favorite lies within their cuisine.

Jamaica is well known for its spicy flavors and signature dishes such as ackee and saltfish, oxtail and escovitch fish. Today, we’re going to focus on jerk. Wouldn’t it be great to make any poultry jerk from chicken to pork to shrimp? Here’s a recipe that will bring the island’s flavors to life in your kitchen.

Jerk Seasoning from Food Network :

1 tablespoon allspice
1/4 teaspoon ground cinnamon
1/4 cup light brown sugar
1 teaspoon red pepper flakes
1/4 teaspoon ground cloves
1/4 teaspoon ground cumin
2 teaspoons salt
1 teaspoon freshly ground black pepper
2 tablespoons canola oil

In a medium bowl, combine all ingredients with 2 tablespoons of canola oil.
