Happy Raspberries and Cream Day! What’s your favorite way to enjoy this tasty berry? Perhaps it’s in your favorite smoothie or lemonade. Maybe you enjoy it on toast as a jam. Have you ever tried mixing it in your cereal or oatmeal for breakfast? We also can’t forget how great the raspberry flavor can be in a cake or brownie recipe.
Not only are raspberries a pleasure for your palate, they are good for your health. They contain a wide range of antioxidants and anti-inflammatory compounds. They are low in fat and calories and high in fiber, which makes for the perfect dieter’s treat.
Since it’s not only raspberry day, but raspberries and cream day, we’ve decided to celebrate with an cool-down summer ice cream recipe:
Smooth Raspberry Ice Cream from Cafe Carol :
2 cups raspberries
1 cups white sugar
1 cups half-and-half
2 cups heavy whipping cream
2 teaspoons vanilla extract
Puree the raspberries in your blender or food processor then pour the mixture through a strainer to remove the seeds.
Combine the remaining ingredients then add raspberries.
Transfer mixture into your ice cream maker and freeze according to its instructions.
