Pasta is one of the world’s most popular comfort foods. There’s just something about a plate of spaghetti and marinara sauce that evokes fond childhood memories. One of the best things about pasta, though, is that it’s so universal - there are literally hundreds of shapes, sauces and styles in which you can prepare this dish.
You may have never considered creating your own rendition of this feel-good treat, but fortunately it’s a skill you’ll keep handy forever. After all, true connoisseurs know that the best way to prepare a pasta dish is to hand-make it with love.
Don’t be intimidated – we’ve simplified the process for you. With the help of the Cuisinart 2-lb Bread Maker, you’ll be churning out succulent, al dente pasta in no time.
Before you start rolling out perfect fettucine, however, you need to prepare a mean pasta dough. Here is a Cuisinart original recipe for Basic Pasta Dough.
Basic Pasta Dough
Makes 2 pounds, about 20 servings
¾ cup plus 1 tablespoon water
¼ cup olive oil
1½ teaspoons salt
4 cups unbleached, all-purpose flour
Place ingredients, in order listed, in the bread pan fitted with the kneading paddle. Secure the bread pan in the Cuisinart® Automatic Breadmaker. Press menu button to select the Pasta Dough program. Press Start/Stop to mix and knead.
While the dough is mixing, scrape the sides of the bread pan with a rubber spatula after 5 minutes, to fully incorporate ingredients. When cycle is complete, remove dough from bread pan and place on a lightly floured surface. Let dough rest for about ½ hour.
Once rested, knead dough a few times by hand. If dough is too wet, knead in 1 tablespoon of flour at time until desired consistency is achieved.
Hand-roll pasta or run through a pasta roller machine.
Ta-da! Freshly prepared dough. Now, divide your dough into four portions.
For easy rolling, use a Pasta Maker Attachment on a Cuisinart Stand Mixer. To use the machine, simply take one portion of dough and feed it through, at the lowest setting (#1). Cover the remaining dough to use later. Fold the dough portion in half and feed it through again. Repeat this about ten times. Then, feed the dough into the higher settings consecutively, i.e. start with #2 and work your way up to the narrowest setting. You don’t need to fold the dough this time.
Then, cut your dough into your desired shape using the cutting attachment on your machine.
Repeat this process for the three remaining dough portions.
Let the cut pasta sit for some time on a drying rack, then cook normally in boiling water.
