Did you know that avocados are fruits, not vegetables? Many people make this common mistake and knowing the facts will prepare you for what I’m about to say next. Have you ever had avocado pie? Probably not, but this Californian dessert is surprisingly delicious! In fact, it looks and tastes very similar to key lime pie. It’s tart, rich, creamy and easy to love.
Avocados are nutrient packed, filled with fiber, potassium and vitamins. Some people worry about the 30 grams of fat, but it’s made up of mostly healthy fat (unsaturated fat). Not to mention, children love pie! This is a fun and unique way to sneak a super food into your family's diet. If that doesn’t convince you to give it a try, what will? Here’s a simple and easy recipe:
No-Bake Avocado Pie
1 large avocado, peeled and pitted
1 9-inch graham cracker pie crust
1 can sweetened condensed milk (14 ounces)
1/2 cup lemon juice
Whipped cream for topping
Mash the avocado and add lemon juice and sweetened condensed milk. Blend ingredients until smooth.
Prepare pie crust and pour in avocado mixture.
Refrigerate for 3-4 hours, allowing the pie to set.
