We don’t often stop to think about the pretty green garnish at the top of our tasty soup. When it comes to parsley, our way of thinking may be preventing us from experiencing the great flavor and nutrients it has to offer. Let’s stop thinking of it as merely a pop of color on our plate and as more of an herb, which is exactly what it is!
The health benefits of parsley are almost endless, from lowering the risk of cancer to relaxing stiff muscles. It’s packed with vitamins C, B12, K and A, which promote healthy immune and nervous systems. Its folic acid allows it to help control blood pressure. As if all of this isn’t convincing enough, parsley also supports kidney function by flushing excess fluids out of the body.
Will you give parsley a fighting chance as a main ingredient and not just a decoration?
Parsley Pesto via Food Network
2 cloves garlic
2 cups packed, stemmed Italian parsley
1/2 cup freshly grated Parmesan cheese, or to taste
2/3 cup olive oil
Salt and pepper
In a food processor place the garlic, parsley, pinch salt, walnuts, and cheese. Process until they form a paste. Gradually blend in olive oil, taste adjust your seasoning if necessary.
