Avocado White Chocolate Macadamia Nut Cookies
Makes 35 cookies
1 Hass avocado (4 1⁄2 ounces)
1⁄2 cup (1 stick) unsalted butter, at room
1 1⁄2 cups dark brown sugar
2 large eggs, at room temperature
2 teaspoons pure vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon coarse salt
1⁄2 teaspoon baking powder
1 1⁄2 cups chopped Macadamia nuts
1 1/2 cups white chocolate chips
Cut the avocado in half lengthwise, throw out the pit, and remove the avocado from the skin. Mix the avocado in a large bowl with the butter and brown sugar until they achieve a light, fluffy texture. Add the eggs one at a time, and then the vanilla. Next add the flour, baking soda, baking powder, and salt. Add the Macadamia nuts and white chocolate chips.
Preheat the oven to 325°F. Spray a baking sheet to prepare it for the dough. Use your hands or a regular spoon to create small, about two-inch in diameter balls and arrange them on the sheet. When you’ve used up all of the dough (this could be 2-3 sheets, depending on their size and the size of your cookies), place your baking sheets in the oven and bake for about 20 minutes. When finished, let cool for 5 minutes, and serve!
