Tomato Vodka Mascarpone Tapenade
Ingredients: 1 can whole tomatoes 1/3 cup vodka 1/3 cup olive oil 1/2 small onion, diced 1 tbsp tomato paste 4 medium garlic cloves 1/2 cup mascarpone cheese 1/2 cup fresh basil leaves 1 tablespoon fresh lemon 1/4 cup capers, drained salt and pepper to taste
