Potato SaladUser Submitted Recipe
6-8 potatoes not peeled
1 whole onion chopped
1/4 cup parsley chopped
1/4 cup vegetable oil
1/4 c cider vinegar
1/2 tsp salt
1/2 Tbs sugar
1/8 tsp pepper
1/2 lb bacon cooked and crumbled
3 eggs hard boiled and chopped
mayonnaise to taste and for consistency
Cook potatoes for 20 minutes, cool slightly then, rough chop.
Add the onions, egg, parsley and bacon .This salad will be room temperature.
Mix vinegar,oil, seasonings and mayonnaise in a jar to desired consistency, pour over salad and toss.
