Twice Baked Sweet Potato


Ingredients

4 large sweet potatos
1 pkg. sausage any kind eg. Andouie
1/2 C. orange juice
1 T. chili powder or less to taste
1 tsp. cinamon
1/2 C. sour cream
Shredded monterey jack cheese

Instructions

Bake sweet potatoes 1 hr till soft
Scoop out inside leaving enough meat on skin to leave a shell
Mix sweet potato, OJ, Sour cream, spices in a pan heating on low.
When all combined mix in sauteed sausage and scoop back into potato shell. Shells should be on cookie sheet. Top with cheese and pop back in 350 degree oven for 15 min till sausage melts and heated thru.
