Toad in the Hole

2 large Eggs
2 cups unbleached Flour
1 cup Milk
1/4 cup Cold Water
Salt & Pepper
1lbs Good Quality Pork Sausages of your choosing look for a sage seasoned not an Italian style Sausage
1 Medium Onion sliced
2 tbsp Lard or Dripping or Cooking Oil*
Instructions
preheat oven to 425f
Crack open the eggs into a blender and lightly mix. Add the milk and water together,
Set aside.
Sift the the flour into a large bowl and season with salt & pepper. add to the blender slowly until you have a stiff but smooth batter with no lumps. Allow to rest for half an hour.
On a low heat cook the Sausages and
Onion in a cast iron 12" frying pan on all sides until nicely browned. Do not prick the skins! remove from pan and allow to cool.
Now place the pan in the oven. Once it is quite hot and the fat is sizzling, quickly, but carefully, Pour in the Batter mixture. Then add the Sausages & Onions,
Place back into the oven and bake for around 1/2-3/4 hour until the batter is puffed up, golden brown and crispy. Serve with mashed potatoes and an Onion or Mushroom Gravy.
