Healthy Cocoa Rice Pudding


Ingredients

1 c. cooked rice, room temp
1/2 ripe avocado, mashed
1/4 tsp lime juice
1/4 c. vanilla-flavored rice milk
1 tbsp apple juice
3 tbsp cocoa powder

Instructions

Mash avocado half with the lime juice. Gently blend into the cooked rice along with the rice milk, and apple juice. finally blend in the cocoa powder. Chill for about an hour or two before eating.
