Risotto with Veggies


1/2 cup Orzo or any other fun small pasta shapes
1 small carrot, peeled and diced
1 small zucchini, diced
1/2 cup chopped broccoli florets
1/2 cup chopped tomatoes
1 Tbsp butter (unsalted)or olive oil
1/4 cup grated cheese (cheddar, parmesan, or any other hard-type cheese)
2 Tbsp chopped parsley or cilantro (optional)


Put the pasta in a saucepan together with the carrot. Cover generously with boiling water and cook for 5 minutes. Add the zucchini and broccoli and continue to cook for about 7 minutes. Melt the butter (or olive oil) in a saucepan and stir in the drained pasta and vegetables. Toss in the cheese until well blended. Enjoy!
