2 1/2 Pounds fresh peas
1/4 Cup mayonnaise
1 Tbsp Chopped fresh parsley
1 Tbsp tarragon vinegar
3/4 Tsp Salt
1/8 Tsp ground black pepper
1 Bunch or 1 bag radishes, finely chopped
1. Shell the peas in 3-quart saucepan, heat 3/4 cup water to boiling over high heat; add fresh peas and heat to boiling.
2. Reduce heat to low; cover saucepan and simmer 3 to 5 minutes, just until peas are tender. Drain peas in a colander; rinse with cold running water until cool. Set aside.
3. Prepare dressing: In large bowl, with wire whisk or fork, mix mayonnaise, parsley, tarragon vinegar, salt, and pepper until mixture is smooth and well combined.
4. Add fresh peas and radishes to dressing; toss. To serve, line bowl with lettuce' spoon salad over lettuce.
