1 large sweet potato
2 tablespoons butter
1 teaspoon vanilla
1/2 teaspoon cinnamon
2 teaspoon granulated sugar
1 tablespoon powdered sugar (optional)
Wash and peel sweet potato. Using a french fry cutter, cut raw potato into strips.
Melt butter. Add sugar, vanilla and cinnamon and mix. Roll potato strips in butter mixture and place evenly on a microwave plate. Microwave for 3 to 4 minutes.
Remove from plate and place on paper towels to cool and dry. Cut into sizes that are easy for a toddler to pick up. Sprinkle with a little powdered sugar or cinnamon or dip into powdered sugar.
