Place peas in a steamer basket to fit a 3- to 4-quart saucepan filled with one inch of water. Place a tight fi tting lid on pan and place over high heat. When liquid comes to a boil turn heat down to medium.
Steam peas 20 to 25 minutes, until extremely soft.Place steamed peas in the work bowl of Cuisinart® food processor fitted with metal chopping blade. Process peas for about 30 seconds. Scrape work bowl. Process for an additional 20 seconds adding 1 tablespoon of cooking liquid at a time until desired consistency is reached.
Allow mixture to cool. Store in airtight container for up to 3 days.
