DIY Protein Bars

Whether you’re a workout junkie or just want to stay healthy, a diet rich in protein is great for your body. Did you know that hair and nails are mostly protein? Protein also builds and repairs tissues, builds bones, muscles, skin and blood and makes enzymes, hormones and more.

Sometimes we don’t have enough time to get all the right nutrients in our system daily. Vitamins and supplements are easy ways to help. When it comes to protein, protein bars are quite popular. However, one can almost cost $5.00 at your local grocery store. So why not save some money by making your own?

Protein Bars via Food Network

Ingredients

1 cup soy protein powder
1/2 cup oat bran
1/2 cup whole-wheat flour
1/4 cup wheat germ
1/2 teaspoon kosher salt
1/2 cup raisins
1/2 cup dried cherries
1/2 cup blueberries
1/2 cup dried apricots
1 (12.3-ounce) package soft silken tofu
1/2 cup unfiltered apple juice
1/2 cup dark brown sugar, packed
2 large whole eggs, beaten
2/3 cup natural peanut butter
Canola oil, for pan

Preheat the oven to 350 degrees F. and line the bottom of a 13 by 9-inch glass baking dish with parchment paper. Lightly coat with canola oil then set aside.

Combine the protein powder, oat bran, wheat flour, wheat germ, and salt in a large mixing bowl and set aside.

Coarsely chop the raisins, dried cherries, blueberries and apricots and place in a small bowl and set aside.

In a third mixing bowl, whisk the tofu until smooth. Add the apple juice, brown sugar, eggs, and peanut butter, one at a time, and whisk to combine after each addition. Then add to the protein powder mixture and stir well to combine. Fold in the dried fruit.

Spread evenly in the prepared baking dish and bake in the oven for 35 minutes or until the internal temperature reaches 205 degrees F. Remove from the oven and cool completely before cutting into squares.
