Gluten-Free for You and Your Toddler

People who suffer from celiac disease tend to have a difficult time creating gluten-free recipes to meet their needs.  Gluten is a protein composite found in wheat, barley, and rye and is used in some form in most meals—from pasta to bread to oatmeal and all other delicious carb-full treats.  Although it is difficult to maintain such a diet, you don’t have to eliminate delicious meals or stick to only a select few recipes.  Time to diversify!

If you think your baby might have celiac disease, look for symptoms such as pain and discomfort in the digestive tract, chronic constipation or diarrhea, or anemia.  For more information, check out the Celiac Disease Foundation and please consult with your doctor.  If your baby does require a gluten-free diet, we are here to give you a few great ideas for recipes that supplement gluten for safe alternatives.

 

Our first example: how to make delicious porridge for you toddler!  Substitute the oats with a variety of nuts. Although it tastes different, it’s a great hot cereal alternative.  The following recipe is from Weelicious and we can’t get enough of it!  Do the prep work the night before so making breakfast in the morning will take only 5 minutes!  It is so simple, nutritious, and delicious! 

Gluten-Free Banana Porridge via Weelicious

Ingredients

  • 1/2 cup raw cashews
  • 1/2 cup raw almonds
  • 1/2 cup raw pecan halves
  • a pinch of salt
  • 1 ripe banana
  • 2 cups coconut milk
  • 2 teaspoons ground cinnamon

Preparation

1. Place the nuts in a large bowl and sprinkle with salt. Add enough filtered water to the bowl to cover the nuts by 1 inch. Cover and soak overnight.

2. Drain the nuts and rinse until the water runs clear.

3. Place all the ingredients in a food processor or high-powered blender and process until smooth, about 1 minute.

4. Pour the mixture into a saucepan over medium-high heat and cook until thick, about 8 minutes.

5. Serve warm or cold with dried fruit.

 

 

Don’t knock cookies off your child’s list of possible desserts—we have a scrumptious Gluten-free and Vegan Oatmeal Raisin Cookies recipe from Weelicious that will be the family’s new favorite!  Although these cookies have no nuts, gluten, eggs, or dairy, they are what all cookies are meant to be—sweet, moist, and mouth watering! 

Gluten-free and Vegan Oatmeal Raisin Cookies via Weelicious

Ingredients

  • 1 tablespoon ground flax seed
  • 3 tablespoons water
  • 2 cups gluten free old fashioned oats
  • 1 cup gluten free all purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 stick (1/2 cup) vegan butter, softened (I used earth's balance)
  • 1/2 cup white sugar
  • 1 teaspoon vanilla extract
  • 1 cup raisins

Preparation

1. Preheat oven to 350°F.

2. In a small bowl, whisk together the flax and water. Let sit for 2 minutes.

3. In a separate bowl, whisk together the oats, flour, cinnamon, baking soda and salt.

4. In the bowl of a standing mixer, or with an electric mixer, cream together the butter and sugar until light and fluffy, about 3 minutes. Add the flax mixture and vanilla extract and stir until combined.

5. Gradually add the flour mixture until just combined. Add the raisins and stir to thoroughly combine.

6. Using a 2-tablespoon measure, place cookie dough onto Silpat or parchment-lined baking sheet. Bake for 15-20 minutes, or until golden brown.

 

Finally, remember that rice (unless it’s a prepared rice mix) is gluten-free so you can absolutely include that into your toddler’s diet.  Stores are also coming out with more gluten-free products (that are also tasty!) to make life easier for you and your toddler’s dietary needs.  Hopefully scientists will come up with a solution for these autoimmune diseases, but in the meantime, just remember to read labels and experiment with creative gluten-free recipes!
