The Gluten-Free Pantry

People in greater numbers than ever before are discovering they have an allergy or sensitivity to gluten. Whether it’s a slight sensitivity or full-blown celiac disease, it calls for a complete overhaul of the pantry.

A severe case in the family calls for a banishing of all products with gluten, a gluten-proofing of the entire home. Milder cases might be managed by setting up a dedicated gluten-free cupboard and gluten-free shelves in the refrigerator. Cross-contamination can be further avoided by having separate equipment, such as toasters and cutting boards, for gluten-free cooking. Always check with your doctor about requirements for your particular case.

A diagnosis of gluten allergy or sensitivity does not mean an end to all desserts and breads. There are many gluten-free flours and baking products readily available today that can be blended to replicate your favorites. Whether you bake from scratch or prefer the convenience of mixes, you have many delicious gluten-free options.
