by:Apricot is an amazing, healthful fruit to serve to babies. Apricots
contain good quantities of Vitamins A (including betacarotene), C and Folate,
as well as Potassium and Calcium.
The term "apricot" stems from the Latin term, Prunus
armeniaca, or "Armenian
plum." Being of Armenian descent, I was introduced to apricots as a baby
myself and have always tried to make a point of keeping it a part of my (now
four year old) son's finicky fruit intake. All you have to do is combine it
with a little natural sweetner or yogurt to enhance its slightly bitter flavor.
Here's how you can introduce apricot
to your little one:
Apricot Puree
Ingredients:
· 1 lb. dried apricots
· 2 cups white grape juice or apple juice
Prep:
· Put juice and fruit in a saucepan.
· Simmer for 15 minutes.
· Put ingredients, including liquid, into a
food processor, like the Cuisinart
PowerPrep Plus 14-Cup Food Processor, and puree away.
· Cool for 10 minutes.
· Add cereal for thicker consistency if
desired.
Apricot, Apple & Pear
Ingredients:
· 1/2 cup chopped dried apricots
· 1 pear, peeled, cored and chopped
· 1 apple, peeled, cored and chopped
· 4 tablespoons water
Prep:
· Combine apricots and apples in a saucepan.
· Add water.
· Bring to boil.
· Cover and simmer for 3 to 4 minutes.
· Add pear and simmer for 2 more minutes.
· Puree in food processor, like the Cuisinart
PowerPrep Plus 14-Cup Food Processor.
· Cool for 10 minutes.
Tastes great over rice or mixed with vanilla baby yogurt!
